What is a good book on the historical and anthroplogical differences between wheat and rice growing cultures?

I once read a restaurant review that referenced a book on the different historical lifestyles and cultures of countries that grew wheat (less food but more spare time) and rice (more food less time). C. Kayak gave the same book I was going to give. It is a very great Pulitzer Prize winning book and discusses other things as well.
